Specializing in Edo-mae (Tokyo style) unagi, Ishibashi (石ばし) is a famous Michelin-starred restaurant that has been selling unagi since 1910. The century old family establishment may no longer be sitting in its original location after the air raid of Tokyo in 1945 destroyed the building, but the Nemoto family never stopped their pursuit of perfect the art of cooking eel. Currently run by the 3rd and 4th generation of Nemoto Mitsuaki and his son Kazunori, Ishibashi continues to be a contender to holding the title of the "best" unagi-ya in Tokyo. Ishibashi's eel is sourced from a designated farm in Yoshida-cho, Shizuoka prefecture.
