The Afuri kitchen makes all of the ramen using the same techniques employed in Nanasawa Atsugi (Kanagawa Prefecture), the “central kitchen” at the foot of Afuri mountain.

Very excited to finally try one of Tokyo's most acclaimed ramen shops, Afuri, in the United States. It's their first location outside of Japan. We ordered the signature Yuzu Shio - a light-colored broth built upon a reduction made from dried seafood, seaweed, an assortment of salty ingredients, citrus notes of yuzu, and loads of umami. Their kitchen makes all of the ramen using the same techniques employed in Nanasawa Atsugi (Kanagawa Prefecture), the “central kitchen” at the foot of Afuri mountain.
