Michelin-starred Sushi Hachiya (鮨八や). The Chef handles everything behind the counter himself. For us, a big part of its appeal is the value. Our omakase, which consisted of 14 different courses (including an assorted sashimi platter), was just ~$100 USD. I would even go so far to say that the meal was innovative; with the different variations and toppings, it was hard to predict what was coming. The uniqueness was actually quite enjoyable. 🍣
