Each dish was explained to us in detail and the sheer amount of effort to produce just a single course is astounding. A quick dash to a nearby farm to pick up freshly harvested vegetables; a longer journey to inspect a pig or collect a consignment of eggs; an evening excursion for freshwater fish, shrimp, and eels. At other times, they will drive into the mountains, hike for hours, and then stay overnight before returning to Hangzhou with just a batch of wild shiitake mushrooms.

The number of staff is over 100. Although the restaurant loses money, Dai doesn't care as long as guests have the best dining experience. And all this effort truly shows. You can taste the difference, which makes Longjing Manor a world-class restaurant.

Longjing (Dragon Well) Manor is a special restaurant surrounded by tea plantations and away from the crowds of West Lake, Hangzhou. The owner, Dai Jianjun, has committed to using only natural ingredients, untainted by pesticides or melamine, and with no added MSG. Each morning, his buyers drive out into the countryside to collect the best of the season’s produce.

In addition to the wonderful food, the setting was beyond beautiful. There are eight private rooms, each with its own terrace, scattered in pavilions around the garden. They are furnished in the spare style of the Ming dynasty, with framed paintings and calligraphy on the walls. There's no menu. Guests simply decide how much to spend in advance and the kitchen sends out whatever is good that day. Longjing Manor could very well be among the best restaurant in China.
