My dinner started with the warmest surprise from @chefchuan_tw ❤️ Chicken soup with red dates and ginger to help soothe my sick for days body. Thank you for being so thoughtful!
•Favorite of the evening was pacific white shrimp and garlic chive pesto on a searing hot stone. The fragrance of @sinasera24 ( all sorts of plants found in the vicinity of the restaurant) completed the dish beautifully.
•Mahi Mahi on a jello made with beetroot and shiso with a hint of orange. Sweet and pretty, perfect for human ant🙋🏻‍♀️
•Tartlet of confit octopus, grape, cream cheese flavored with fennel, honey and lemon. Edible flowers and microgreens added cress freshness.
•Squid ink puff stuffed with mullet milt, portobello mushroom and pickled chili. Topped with brûlée garlic butter and parsley. This was very delicious.
•Venison tartare eclair. 台灣18麥 sourdough, pickled then fried bitter gourd, wasabi mustard microgreens. Truly amazed with the wide range of greens from their farm.
•長濱金剛米 was used to make abalone liver risotto, creamy and brilliantly briny. Topped with slow cooked then grilled abalone, Sichuan peppercorn and micro coriander.
•Stunning chargrilled Spanish mackerel and a banging umami sauce made with mussels, tomatoes, saffron and lots of herbs. A side of kohlrabi, winged beans, broccolini and manganji peppers.
•Roasted free range chicken with amazing texture and flavor, special wax apple from Pintung 鹽水蓮霧, chicken burdock jus.
•Ostrich cabbage roll in ostrich broth flavored with aged preserved radish.
