I am not posting this meal because I think this sushi can compete with the top masters. I just want to make a point.
A friend of mine from Fukuoka is in town and she wants to go to a place she frequented when she was living in Tokyo.
A very lokal place which is open for lunch and continues to serve until closing, it also caters for the neighborhood for take-out. You walk in and get seated on the counter next to a couple which of course instantaneously start to talk to you. They both are 85 years old, know themselves since junior high school, thus 70 years and are married for 62. They drink beer to start and then switch to sake for the nigiri which they order a la carte from them menu which is placed in front of the customer.
The sushi itself is of great freshness and prepared highly skilled. Just look at the presentation of the kohada. Cut in small stripes and braided on top of the Shari, it is something I have not seen before.
The price is very reasonable.
You won’t find this combination nowhere except in Japan.
