A very young Chef who trained for years at Hoshino is since April 2021 on his own.
One can tell the pedigree but he is starting to evolve and come out on his own.
Some excellent dishes, the one year old Karasumi on rice, the shirako soup and the sweet potato were outstanding.
Some other dishes might had a little too much salt and maybe a little less than top ingredient.
Nevertheless, this young man will go places.
