It is always hard to describe how vaste, deep and valuable the work of Fabio Picchi has been over the years.
A Visionary, not known enough, surely someone who understood the system and enlightened it over 30 years ago with some concepts which are still considered avant-garde. I will not spend many words on it now, since you should just feel it, read it, live it.
And I can help anyone with that.
But this time I want to praise the beautiful way his son @giuliopicchi keeps running something that would have been too heavy for many. Brilliantly.
Yesterday, at @teatro_del_sale , @cibreo_firenze cultural circle - theater-restaurant, they celebrated leftovers from the main restaurants in a triumphant grand dinner, a glorious show and a flow of words and ideas beyond revolutionary.
Stories of old pieces of cheese left in empty fridges, of Parmigiano Reggiano crusts, of kitchens where technique-obsession and ego didn't arrive yet and of dinners made out of, well, "nothing". #mostofitaly
