Ramen Shima, a new ramen shop in Nishi-Shinjuku, Tokyo, offers refined shoyu, shio, and tsukemen made with premium ingredients and technique. The katsuo konbusui tsukemen is a standout dish, served in a broth made from skipjack tuna and konbu seaweed.
