in sapporo, japan (december’23)
stopped at one of the most iconic spots here for miso ramen for tourists and locals like, arrived a good 30 mins before opening to get seats but the turnover is pretty fast as there are quite a lot of seats inside and the kitchen is quite sizeable for a ramenya.
quite a satisfying bowl, very rustic and unpretentious served in big home-like bowls. the base is made of chicken and pork, and the richness of the miso is cut through with garlic aromas and a bit of grated ginger. also enjoyed the topping of ample amounts of smokey fried bean sprouts. the spicy miso was a also nice, the mild spiciness helped balance with the richness of the bowl more. the noodles i also liked, typical yellow wavy ramen of sapporo with a pleasant mild chew. definitely worth seeking out when in the area.
