Lunch at @28posti in Milan. It is easy to spot the DNA of Noma here in Marco Ambrosino’s @ambrosino cooking and even plating, with a whole lot of fermenting going on, which is no bad thing. A dish of pasta with fermented pasta water for example was a revelation. It just reinforces the global influence that that restaurant has had throughout the culinary world.
There is a multi course tasting menu on offer here and you can choose from 5 or 8 dishes. With some of the courses themselves composed of two, three or even four plates, I thought at €80 it was pretty good value. And at €45 for 7 very generous glasses of natural wine I left feeling that I had indeed got a bargain. This made the bill that evening at ⭐️⭐️⭐️ Da Vittorio all the more painful.
Lovely food, lovely service, definitely recommended if you are in Milan.
