This welcome sake marks the start of a very deliciously prepared kaiseki meal focused on offering Tsumigusa (freshly picked) cuisine that has gradually evolved over the years, integrating ingredients that can be found naturally in the area such as wild herbs, fish from the streams, as well as fresh fish from the sea. Because of the winter season, we got to try some of the best mountain wild boar out there!

Miyamasou (美山荘) is a very special ryokan built by the Emperor during the Heian Era. It's located in the middle of a forest 1 hour drive north of central Kyoto and absolutely one of our favorite places on the planet with top-notch hospitality.
