Highlights of my fantastic contemporary Turkish degustation at Turk Fatih Tutak in Istanbul.
Bold flavors, respecting tradition, but still creating something totally new based on local ingredients and culture.
Amazing dryaged seabass (with caviar, fig leaf oil), Trachian lamb (with garum and fermented chili sauce), and persimmon(!) with buffalo kaymak “snow”.
Highly recommended.
