Beg, borrow, steal - whatever it takes to get in. @hayato_as_pellegrino is a master. Less

- Justin Hurst added a new meal Dinner at 食堂みやざき at Shokudo Miyazaki (食堂 みやざき)
Shokudou Miyazaki, Kyoto. An excellent meal that’s hard to classify. Informal, lively atmosphere belies the seriously delicious cooking. Watching the young staff cook, joke, sling highballs, and generally have a good time was a delight. And wow, that karaage lives up to the hype. Go if you can get in.

- Justin Hurst added a new meal Dinner at Tha Sakai at ザ サカイ tha sakai
Tha Sakai, Kyoto. Counter-only space with a pretty hidden entrance, tucked behind their more casual Enca. Chef from a favorite of mine in Kobe, bb9, now has a new spot to refine his cuisine right in front of you. Excellent ingredients, cooked only with wood fire and smoke, just like Extebarri, where he worked previously. A wonderful addition to Kyoto.... More

- Justin Hurst added a new meal Dinner at レストランエンヌRestaurant N at Restaurant N
Kyoto + Kanazawa + Kaga Onsen Autumn Trip
Posting a bunch of places all at once, since I’m way behind.
Kanazawa: Restaurant N @restaurant_n
An unexpected find, recommended by a friend. Good modern French food with an excellent selection of Japanese and natural wine.

Yamanaka Onsen: Washu Bar Engawa @yamanakaonsen_washubar_engawa
Super cool spot focusing on nihonshu. Beautiful serving ware, largely made nearby. Serving a cloudy nigori saké in a cup with a mother of pearl “moon” at the bottom was a deft touch. A must go.

- Justin Hurst added a new meal Dinner at 木山 at Kiyama (木山)
Kyoto + Kanazawa + Kaga Onsen Autumn Trip
Kyoto: Kiyama (part 2)
One of the best meals of my trip, though less famous and less expensive than many others. Flavor, texture, aroma, and depth were all balanced. Going back soon.

Despite my embarrassingly bad Japanese, chef was eager to explain about the ingredients and why he chose them.
In a moment of pure Kyoto-ness, we were stopped half way through the meal and taken outside to watch the huge moon rise over the eastern hills. It was a touch of magic.
Very much looking forward to returning in spring, when the bitter greens and bamboo shoots start emerging. Less

- Justin Hurst added a new meal Dinner at InBoscoインボスコ at Imbosuko Jingumae (former In Bosco)
An exuberance of magnificently aromatic Alba truffles at @toshikiwatanabe’s In Bosco. Not pictured, the enormous truffle he chopped up and made “truffle chip” ice cream with. Just unreal.

- Justin Hurst added a new meal Dinner at Villa AiDA at Villa Aida (ヴィラ・アイーダ)
An outstanding meal in deep Wakayama at @villa_aida_wakayama. One table per night. Vegetables from their farm next door. A deep Italian wine cellar (and some Japanese gems too). Delightful hospitality. Absolutely worth the journey.

- Justin Hurst added a new meal Dinner at 松川 at Matsukawa (松川)
A few highlights from a restaurant I’ve spent years trying to get in to. Matsukawa was elegant, restrained, simple, and with impeccable service. Ceramics were gorgeous and often quite notable and/or old. Flavors were subtle and refined. I’d definitely like to go back again, if I can get in, outside of crab season to see what they can do with “normal”... More
