Sushi Nanba, Hibiya, Tokyo. Known for his precise control and combination of temperature of shari and neta, as well as excellent otsumami. Delicious saké as well, nice variety. A place I’d love to go more often, if I could manage to get in.

A hearty and luxurious meal at Ao in Nishiazabu. Just a few seats at the open kitchen counter, one seating a night. Chef certainly has a way with meat, and blends several culinary styles into the menu. Notable wine pairings as well.

Strong start with a few chicken sashimi dishes and small bites, then onto the grill. Everything comes “finished”, no typical pepper, salt, etc. at your seat. Some highlights from a very promising new high-end Yakitori-ya, @yakitori_shinohara. Too many great bites to share all of them. Strong start with a few chicken sashimi dishes and small bites, then onto the grill. Everything comes “finished”, no typical pepper, salt, etc. at your seat. They’re using a very high grade chicken here, apparently quite exclusive. The meal ends with a delicious chicken rice, and a superb ramen. Next time I’m asking for a bigger ramen bowl :)

Finally made it out to Tomita ramen, a good hour+ from my house, by train. Consistently one of the highest rated ramen shops in Japan, and subject of the documentary Ramen Heads. They specialize in tsukemen, though ramen is also available. The “Tokyo X” brand pork plate is a must-add.
