Had high expectations given the restaurant’s reputation, the meal was enjoyable and I appreciated the wide variety of dishes. The comparison of modern and traditional maps tofu was interesting. It’s certainly a good introduction to Chinese cuisine but for people who are familiar with the cuisine, not one single dish really stood out. •

All the dishes were prepared meticulously with Japanese level of attention to detail. To some extent it reminded me of the Harbor House Inn in Mendocino but a lot more exotic. Some highlights: capelin with mountain sorrel; ptarmigan with black currant and reindeer lardon; braised muskox with celeriac. Can’t wait to visit again when the restaurant is back to Faroe Islands! •

Alchemist Copenhagen — The experience created by Chef Rusmus Munk is not just about food, instead it is a complete, immersive, theatrical journey involving all five senses. It starts with the opening of the imposing, hand sculpted bronze doors which weigh over 2 tons, followed by a dance performance, champagne and snacks in the lounge, and then the main show of the evening in a large dining room under a planetarium dome. The whole experience consists of close to 50 “impressions” with themes such as ocean pollution, hunger, organ donation, and digital surveillance. Many ingredients used are invasive species (jelly fish, king crabs, etc), which makes the diners feel a little bit better about spending so much on a single meal... The dinner took almost 7 hours which was a bit tiring especially after a long haul flight, but the experience was truly unique and definitely worth trying at least once. •
