Gillardeau oyster, beef tenderloin & lime. The oyster with beef combo was dynamite!

Foie gras & beer mead ice cream. Honey beer-vinaigrette, butter waffle & rape. Check out the “sunbursts” along the honey beer vinaigrette!

Regional trout “marinated and flamed”. Junipers, mayonnaise, horseradish, cucumber & bread.

Mixed Peas; Poached Egg Yolk, mustard & Mimolette. This one blew my mind!

Sole and brown butter. Smoked almond, leaf spinach, crispy milk skin & rosehip.

Glazed sweetbread. Marinated & pickled radish, capers & chive velouté.

Snails from Odenwald. Walnut-herbs barley & snail’s caviar. Snail caviar is a new one for me... thus, I couldn’t resist

Saddle & tongue of lamb from Müritz “Curry blended”. Aubergine, spices rice, lemon, mint & yoghurt. The orange and green sauces blend together like a fine watercolor panting.

Champagne cream sorbet - Edition Ruinart Rosé. This one was another stunner

Rhubarb & dairy cream. Chervil, quinoa & parsnip. Tapioca chip

Strawberry, basil, burrata. Another home run! I ate this one way too fast, and all in one bite... once it was gone, I regretted not stretching it into several spoonfuls. So good!

Sicilian Almond granita and brioche. The green one is an almond ice cream with herbs. Both go on top of the warm brioche. So sinful!

Praline trolley. I wish I could’ve had one of each!
