Second visit within a few days, this time with my son which made the communication much easier.
This time the Chef insisted that we try to add a special curry sauce to the ramen once we had eaten about half of it.
It completely changed the nature of their ramen. It had a very interesting taste, however I personally prefer the original taste.

For me his theatrics are somewhat off putting as he prepares the nigiri sometimes sloppy, so the rice falls apart. He tops the shari with a double or even a triple layer. I don't want to put down the quality of the ingredients but when you can't eat the nigiri because the toppings being so big it becomes vulgar.
However, if these observations do not turn you off, then you are in for a good ride and splendid experience. Mr. Watanabe is a genuine host and enjoys his performance as much as most of the guest. Less

Fantastic place in Fukuoka, serving only horse meat from Kumamoto. The most stunning dish was raw horse liver, surprising texture, soft on the outside and crunchy in the middle, leaving only a faint liver taste at the very end.

One of the best Hakata-style tonkotsu ramen not only in Fukuoka but in Japan.
The Master Chef thawed since his son joined the business and explained to him that it does not hurt to be nice to the customer. One even can take a picture!

Great meal at Sushi Takao. Interesting is that the shari is only slightly seasoned and al dente.
Akamutsu outstanding.

A suburb of Fukuoka, a very young Chef having his small restaurant in a very residential area of this suburb.
Modern sushi, sometimes in the Edo-mae style alternating with the Kyushu style. Great fish selection and a shari very much to my tasting, a little on the acidic side.

A fast, friendly and welcoming pacing of the nigiris makes this a really good place to go. Less

A solid meal from Mume in Taipei.
European cuisine with local ingredients. Well executed.
Outstanding dish was the grouper which was cut quite thick but cooked to perfection in an aromatic broth which provided enough aciddity to create a prefect balance. The grouper was cooked so the flakes were still glassy and came off easily.

Outstanding dish was the grouper which was cut quite thick but cooked to perfection in an aromatic broth which provided enough aciddity to create a prefect balance. The grouper was cooked so the flakes were still glassy and came off easily.
The short rip was rare but eough cooked so it did not become chewy and had a very good flavour on the palate.
The place is small, the table narrowly spaced, so it becomes noisy but not unpleasantly.
A great casual fine dining restaurant. Less

Wonderful sushi restaurant 30 minutes with the bus from the center of town.
A very friendly couple running the place trying to be accommodating to foreigners providing all kinds of material to make the experience good. The lady of the house shows you the fish on her smart phone so you can see what you are eating.

The shari is less acidic as in Edo-mae as Chef Osamu Muto uses sometimes Hassaku to flavour the sushi.
Absolute highlight were the abalone in its own liver sauce, the Tai and Mirufiyu (double layer of different tuna). Less
