Absolutely stunning serving of fillet and belly of mackerel, respectively, served with radish, herb granita and aguachile. Wonderful herbal flavours coming together lifting the superb mackerel to new heights. A bullseye dish by @silvio_germann_mammertsberg at @mammertsberg in Freiburg, Switzerland 👌

Beef tartar and baked celeriac. One of many dishes by @silvio_germann_mammertsberg that underlines the deep umami flavours that characterises a meal @mammertsberg in Eastern Switzerland, close to Lake Constance.
This recently opened place by @andreas_caminada_schauenstein has yet to be reviewed by Michelin but I predict at least one star for this wonderful place with six rooms available for guests who want to spend the night
